Cake! More specifically allergy friendly cake or I’m running out of cake ingredients because I haven’t been to the super market in a while.

I am a fan of ‘Every time is Cake Time’.
There is a slight flaw in this plan. No eggs? No milk? No butter?
Usually I would say Bugger and my cake cravings will be left to develop.

No longer!

1 1/2 cups flour
1 cup sugar
3 tablespoons cocoa
1 teaspoon baking soda
1 teaspoon baking powder
1/3 cup vege/canola oil
1 cup water
1 tablespoon distilled white vingear
1 teaspoon vanilla essence
a pinch of salt.

Mix all dry ingredients together in a large bowl. Mix wet ingredients together in another bowl. Add the wet ingredients to the dry ingredients. Mix well to combine.
Pour in to either a cake tin or dole out into patty cases.

Preheat oven to 170 degrees celcius. Cupcakes = 15 mins cooking time or until they bounce back when you lightly touch the top. Cake = 20mins cooking time or until a skewer through the middle comes out clean.

Note- I half the recipe and added the salt.
